Instructions

  1. Preheat oven to 375 F/190 C and generously grease two standard madeleine pans.

  2. Beat eggs and sugar in a large bowl on high until creamy, about 4 minutes.

  3. Add vanilla, lemon peel, and salt, then gradually beat in the gluten-free flour mix until just combined.

  4. Slowly drizzle in melted butter and beat until fully incorporated.

  5. Spoon batter into prepared molds, smooth the tops, and bake for 10 to 13 minutes until puffed and golden brown.

  6. Invert pans onto wire racks, tap to release cookies, and serve warm dusted with confectioners' sugar.
