Gluten-Free Flax Meal and Almond Flour Muffins

Instructions

  1. Preheat the oven to 350 F (176 C).

  2. Line a 12-cup muffin tin with paper liners.

  3. In a large mixing bowl, combine ground flax meal, almond flour, gluten-free baking powder, ground nutmeg, cinnamon, and salt.

  4. Add melted butter, eggs, sugar, and water or buttermilk to the dry ingredients, stirring until just blended.

  5. Scoop the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.

  6. Optionally, mix cane sugar, nutmeg, and cinnamon in a small bowl, then sprinkle about 1 teaspoon of this mixture onto each muffin.

  7. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the muffins to cool completely before serving.
