Gluten-Free Fadge (Irish Potato Rolls)

An easy gluten-free and dairy-free Irish potato roll, fadge, can be made from leftover mashed potatoes for breakfast or dinner.

Instructions

  1. Preheat the oven to 400 F and line a large baking sheet with parchment paper.

  2. Blend dry ingredients in a small bowl. In a mixing bowl, combine mashed potatoes, egg, and oil; then mix in the dry ingredients until just combined.

  3. Turn the dough onto a lightly floured surface, roll or press to 1/2-inch thickness.

  4. Cut the fadge into shapes and place them on the prepared baking sheet.

  5. Brush with oil and bake for 20 minutes, flipping after 15 minutes for even browning. Serve warm.

  6. Alternatively, to pan-fry, heat 2 tablespoons of olive oil in a large skillet over medium heat and fry each side until golden brown.
