Gluten-Free Date Bars

Preheat the oven to 350 F and line an 8-inch square pan with parchment paper, leaving overhang.

Soak dates in hot water for 15 minutes, then drain and remove skins.

Process 1 cup of oats into flour in a food processor. Add remaining oats, sugar, flaxseed meal, salt, tahini, and coconut oil; pulse until a sandy mixture forms. Transfer to a bowl and clean the processor.

Add the peeled dates, lemon juice, cinnamon, salt, and vanilla extract to the food processor; process until creamy.

Press half of the oat crumb mixture into the prepared pan. Spread the date filling over this layer, then sprinkle the remaining crumb mixture on top and gently press it down.

Bake for 30 to 35 minutes until deeply golden. Let the bars cool completely in the pan, then lift by the parchment and cut into 16 pieces. Store in an airtight container for up to 5 days.
