Instructions

  1. Preheat the oven to 350 F (176 C) and start boiling salted water for pasta.

  2. Cook pasta according to package directions, adding frozen peas two minutes before completion; drain, rinse with cold water, and transfer to a large mixing bowl.

  3. In a medium saucepan, melt butter, then sauté onion and red pepper for 3 minutes until crisp-tender.

  4. Stir in sweet rice flour, cooking for another 3 minutes, then whisk in milk, soup, salt, and pepper; simmer until thickened.

  5. Pour the cooked sauce over the pasta and peas in the bowl.

  6. Add drained tuna and 1.5 cups of cheese to the bowl, then stir to combine.

  7. Transfer the mixture to a buttered 13x9-inch casserole dish and top with the remaining 0.5 cup of cheese.

  8. Combine breadcrumbs with olive oil and sprinkle evenly over the casserole.

  9. Bake for 35 to 40 minutes until bubbling and browned.
