Gluten Free Cinnamon Rolls

Instructions

Coat a 9-inch round cake pan with cooking spray.

Warm milk to 105 F, then combine it in a medium bowl with yeast and 1 tablespoon sugar; let sit 5 minutes until bubbly.

Stir the egg and 4 tablespoons of melted butter into the yeast mixture, reserving 1 tablespoon of butter for later.

In a large bowl, whisk together the gluten-free flour blend, baking powder, salt, and remaining 1/2 cup sugar.

Add the flour mixture to the yeast mixture, stir until combined, and let the tacky dough rest for 10 minutes.

Dust parchment paper with extra gluten-free flour, then roll the dough into a 10x16-inch, 1/4-inch thick rectangle.

Brush the dough surface with 3 tablespoons of melted butter.

Combine brown sugar and cinnamon in a small bowl, then sprinkle evenly over the buttered dough.

Roll the dough into a tight log and pinch the seam to seal it.

Cut the log crosswise into 12 pieces using a serrated knife or dental floss.

Arrange rolls cut-side up in the prepared pan, cover, and let rise in a warm spot for 1 hour.

Preheat oven to 350 F. After rising, brush roll tops with the reserved 1 tablespoon melted butter. Bake for about 30 minutes until light golden brown.

Whisk powdered sugar, milk, and vanilla extract for the glaze until smooth.

Cool baked rolls on a rack for 5 minutes, then spoon glaze over them and serve warm.
