Gluten-Free Chicken and Dumplings

Instructions

Heat a large pot over medium heat, then add oil and sauté onion for 3 minutes until translucent.

Stir in celery and carrot, sauté for an additional 2 minutes.

Add chicken, thyme, salt, pepper, bay leaf, and broth; stir to combine and bring to a simmer over medium-high heat.

Reduce heat to maintain a low simmer and cook the chicken until done, about 10-15 minutes.

While the chicken cooks, prepare dumplings by combining gluten-free flour blend, baking powder, and salt in a bowl.

Stir in chicken broth, melted butter, and egg until just combined, adjusting with more broth if too dry, then set aside.

Remove cooked chicken from the pot, shred, and return it to the stew; discard the bay leaf.

Stir in cream and half of the parsley, then taste and adjust seasoning as needed.

Bring the stew to a simmer and drop in dumpling dough by tablespoonfuls, then cover tightly.

Reduce heat to medium-low, simmer for 15 minutes without lifting the lid, then test a dumpling with a toothpick for doneness.

Garnish with remaining parsley before serving.
