Gluten-Free Carob Brownies

Instructions

  1. Preheat the oven to 350 F (176 C) for a metal pan or 325 F (163 C) for a glass baking dish, then grease an 8x8-inch baking pan.

  2. Whisk flour, carob powder, and salt in a bowl; set aside.

  3. In a large mixing bowl, cream butter and sugar until fluffy, then beat in vanilla extract and eggs until combined.

  4. Gradually add the flour-carob mixture and nuts to the wet ingredients, beating just until combined.

  5. Scrape the brownie mixture into the prepared pan.

  6. Bake for about 25 minutes in a metal pan or 35 minutes in a glass pan, or until a toothpick inserted into the center comes out clean.

  7. Cool for at least 15 minutes before cutting, and optionally sprinkle with gluten-free confectioners' sugar.
