Instructions

  1. Preheat oven to 350°F.

  2. Grind 2 cups of certified gluten-free oats into oat flour using a coffee grinder.

  3. Combine oat flour, baking powder, baking soda, brown sugar, and cinnamon in a mixing bowl; whisk until blended.

  4. In a separate bowl, beat eggs, then whisk in yogurt, apple juice, oil, and vanilla; pour this wet mixture into the dry ingredients and stir thoroughly.

  5. Fold in shredded apple and walnuts, stirring until just blended.

  6. Line or grease a muffin pan and fill cups 3/4 full with batter.

  7. Bake for 16 minutes, or until a toothpick inserted into a muffin comes out clean.

  8. Sprinkle hot muffins with cinnamon-sugar and cool for 10-15 minutes before serving.
