Instructions

  1. Preheat oven to 375 F (190 C) and line a small baking sheet with parchment paper or grease it.

  2. Sift flour, salt, baking powder, cinnamon, nutmeg, and sugar into a medium bowl.

  3. Incorporate cold butter substitute into the flour mixture by hand, then add currants.

  4. Combine cider vinegar with coconut milk, reserving 1 tablespoon for later, then pour into the dry ingredients and blend thoroughly with an electric mixer.

  5. Add mayonnaise and beaten eggs, mixing until just combined; then mix in baking soda.

  6. Transfer the batter to a floured cutting board and shape it into a 6-inch round loaf.

  7. Cut an "X" on top of the loaf with a sharp knife.

  8. Brush the loaf with the reserved coconut milk, let it rest for 10 minutes, then brush again, using an additional tablespoon if needed.

  9. Bake for 35 to 45 minutes, or until the loaf is golden brown and cooked through.
