Instructions

  1. Preheat the oven to 325 F and line two baking sheets with parchment paper.

  2. Whisk together almond flour, baking soda, baking powder, and salt in a small bowl.

  3. Beat butter in a deep bowl until creamy.

  4. Add sugar and beat until the mixture is creamy, 3 to 5 minutes.

  5. Mix in the egg and vanilla, beating until thickened and fluffy, about 2 minutes.

  6. Gradually add the dry almond flour mixture, blending on low speed until just combined; the dough will be soft.

  7. Stir in the chocolate chips.

  8. Scoop 2 tablespoonfuls of dough onto the prepared sheets, spacing them 2 to 3 inches apart.

  9. Bake one tray at a time for 13-15 minutes, until the edges are golden and the centers are puffed.

  10. Cool cookies on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
