Instructions

  1. Line a baking sheet with foil, spray it with nonstick spray, and prepare an ice bath in a bowl large enough for the saucepan. Wash and carefully dry strawberries.

  2. Combine sugar, water, and corn syrup in a medium saucepan over medium-high heat; insert a candy thermometer. Stir until sugar dissolves.

  3. Cook without stirring until the thermometer reads 300 F, wiping down saucepan sides occasionally with a wet pastry brush to prevent crystallization.

  4. Once 300 F, immediately remove the pan from heat and immerse its bottom in the ice bath to stop cooking, ensuring no water enters the pot. When bubbles stop, remove the pan from the ice water.

  5. Holding strawberries by the stem, dip each almost completely into the hot candy. Remove, let excess drip, turn a few times, and place on the prepared baking sheet.

  6. Repeat quickly with remaining berries.

  7. Let candy set at room temperature. Serve immediately.
