Instructions

  1. Preheat the oven to 375 F and spray a baking sheet.

  2. Cut pork tenderloin into 1-inch rounds.

  3. Whisk vinegar, honey, and mustard together to create the glaze; set aside.

  4. Heat oil in a large skillet over medium heat, then sauté the pork medallions for one minute per side.

  5. Transfer the medallions to the prepared baking sheet and generously brush them with the reserved glaze.

  6. Cook in the oven for 10 minutes.
