Glass Peanut Brittle

Instructions

  1. Line a baking sheet with foil and spray thoroughly with nonstick cooking spray.

  2. In a 4-quart saucepan, combine sugar, water, and light corn syrup over medium heat; stir until sugar dissolves. Increase heat to medium-high and insert a candy thermometer.

  3. Cook the mixture to 260 F (126 C). Incorporate peanuts, butter, and 3/4 tsp salt, then reduce heat to medium.

  4. Continue cooking and stirring to 295 F (146 C).

  5. Remove the pan from heat immediately, then stir in vanilla.

  6. Scrape the candy onto the prepared sheet and spread it into the thinnest possible layer.

  7. Once pliable, stretch the brittle between your hands until as thin as possible, then cool completely.

  8. Break the cooled brittle into small pieces for serving; store in an airtight container.
