Gingerbread Pancakes

Instructions

Heat a griddle to high, then reduce to medium-low for cooking.

Whisk flour, baking powder, salt, sugar, cinnamon, cloves, allspice, and ginger together in a large bowl.

Melt butter in a measuring cup, then add molasses, milk, vanilla extract, and egg; beat until combined.

Pour the wet ingredients into the dry, whisking until only a few lumps remain; thin with milk one tablespoon at a time if batter is too thick.

Cook 1/3 cup portions of batter on the griddle for about 1 minute per side, or until golden brown and cooked through.

Keep cooked pancakes warm on a baking sheet in a 200F oven.

In a small saucepan, whisk molasses with maple syrup and heat until just warm.

Serve the pancakes with the warm syrup, whipped cream, sprinkles, and an optional dusting of confectioners' sugar.

To make gingerbread man pancakes, grease a large cookie cutter, heat it on the griddle for 1-2 minutes.

Add batter to fill the cutter, allowing it to spread; carefully remove the cutter once the batter has set.

Flip the shaped pancake and cook until golden brown.

Decorate with royal icing or serve with syrup and powdered sugar.
