Gingerbread Cookies - Czech Pernik na Figurky
These Czech gingerbread cookies, known as pernik na figurky, feature the distinct flavors of honey, rum, and lemon zest.

Instructions

Preheat the oven to 325 F.

Combine flour, sugar, spices, and baking soda in a large bowl, then add honey, eggs, rum, and zest to form a smooth dough.

Wrap the dough in plastic and let it rest for at least 30 minutes.

Roll the dough 1/8- to 1/4-inch thick between two pieces of parchment paper. Cut out various shapes, leaving 2 inches between cookies, and remove the scraps.

Lift the parchment paper with the cookies onto a sheet pan.

Bake for 15 to 20 minutes, or until the edges are light golden.

Cool cookies completely on the pan before transferring them to a wire rack.

Repeat the process with the remaining dough and scraps.

Decorate the completely cooled cookies with icing, if desired, and allow the icing to harden before storing in an airtight container with parchment paper between layers.
