Instructions

  1. Preheat the oven to 350 F and line 2 cookie sheets with parchment paper.

  2. Whisk flour, baking soda, salt, ginger, cinnamon, and white pepper in a medium bowl.

  3. In a large bowl, whisk melted butter and sugar until smooth, then incorporate egg, yolk, vanilla, and molasses.

  4. Fold dry ingredients into wet until combined, then chill the dough for 20 to 30 minutes until scoopable.

  5. Scoop dough into 1 1/2 tablespoon balls, roll them in granulated sugar, and place on prepared sheets, 12 balls per sheet.

  6. Freeze the cookie sheets for 30 minutes to an hour to firm the dough.

  7. Roll cookie balls in granulated sugar again, then bake for about 12 minutes until cracked and puffy.

  8. Lightly flatten each warm cookie with a spatula.
