Instructions

  1. Muddle 8 mint leaves, 1 ounce simple syrup, and 3/4 ounce fresh lime juice in a cocktail shaker.

  2. Add 1 1/2 ounces gin and fill the shaker with ice.

  3. Shake.

  4. Strain into a highball glass with fresh ice.

  5. Top with 4 to 5 ounces ginger beer.

  6. Garnish with a mint sprig.
