Gilroy Garlic Ice Cream

Instructions

  1. Combine milk, garlic, vanilla pod, and seeds in a saucepan, then bring to a boil over medium heat and remove immediately.

  2. In a separate bowl, whisk cream, sugar, and egg yolks.

  3. Place a strainer over the cream mixture and slowly strain in the hot milk mixture while whisking constantly.

  4. Return the combined mixture to the pan, stirring continuously over low heat for 10-12 minutes until it thickens and coats a spoon; do not boil.

  5. Chill the mixture over an ice bath, then churn it in an ice cream machine until firm, and freeze until ready to serve.
