Giardiniera (Italian Pickled Vegetables)

Italian giardiniera is a spiced pickled vegetable condiment featuring cauliflower, onion, and carrots.

Instructions

  1. In a large nonreactive pot, bring vinegar, bay leaves, cloves, peppercorns, and salt to a boil.

  2. While the vinegar heats, separate cauliflower into florets.

  3. Once boiling, add cauliflower, onions, carrots, and celery; reduce heat and simmer for 15 minutes.

  4. Transfer cooked vegetables to sterilized jars with a slotted spoon, then top with the hot pickling liquid.

  5. Seal jars tightly, cool, and refrigerate for up to one month.
