Instructions

  1. Heat a deep, heavy-bottomed pan over medium heat, then add butter and bay leaves and simmer until melted.

  2. Continuously spoon off any froth that rises to the surface until it stops forming.

  3. Cool the mixture, then remove bay leaves and strain the pale golden ghee.

  4. Mix in a pinch of salt to achieve a grainy texture when solid.

  5. Store unrefrigerated for 4 to 6 months, or refrigerate for longer preservation.
