Instructions

  1. Grate coconut using the large teeth for a chewy texture and set aside.

  2. In a small pot, dissolve sugar in water and lemon juice over low heat, then bring the mixture to a boil.

  3. Boil the caramel for 5 to 10 minutes without stirring until deep brown, monitoring closely to prevent burning.

  4. Add the shredded coconut to the deep brown caramel and cook for 8 to 10 more minutes, stirring occasionally, until a toasty aroma develops.

  5. Remove from heat, cool slightly, then grease a plate.

  6. Form the caramel mixture into balls using moist hands, spoons, or a scoop, and place them on the greased plate to cool completely.

  7. Serve at room temperature for crunchiness, or warm in a microwave for 5 to 10 seconds for a chewier texture.
