Instructions

  1. Preheat the oven to 350 F.

  2. Roast bacon on a baking sheet for 20 to 22 minutes until crisp; drain and reserve 1/4 cup of drippings, plus an additional 2 tablespoons.

  3. Combine cream cheese, cottage cheese, cream of chicken soup, secret sauce, red pepper flakes, and pimento peppers in a large bowl.

  4. Stir chicken into the mixture, then brush a 9-inch baking dish with 2 tablespoons of reserved bacon drippings.

  5. Crush crackers and cooled bacon together, then mix with shredded cheese, black pepper, and 1/4 cup reserved bacon drippings to form the topping.

  6. Sprinkle the topping over the chicken mixture in the dish and bake for about 30 minutes until golden brown.

  7. Cool for 10 minutes, then serve garnished with scallions.
