Instructions

  1. Start boiling milk in a 2-quart saucepan.

  2. Beat egg yolks and sugar until thick, pale, and dissolved, about 4 minutes.

  3. Gradually pour the hot milk into the egg mixture, whisking constantly.

  4. Return the mixture to the saucepan and heat without boiling until it coats the back of a spoon.

  5. Remove from heat and stir in vanilla extract; serve warm or cold.
