German Sauerkraut Cooked With Wine (Weinkraut)

A German-style sauerkraut cooked in wine, known as Weinkraut, enhances the flavor of canned sauerkraut.

Instructions

  1. Sauté a peeled and cubed small onion in 1 tablespoon lard or oil for 5 minutes.

  2. Add loosened and rinsed sauerkraut to the skillet with the onion.

  3. Stir in one peeled and grated small potato, 3/4 cup dry white wine, and 2 teaspoons sugar, then simmer for at least 20 minutes.

  4. Optionally, incorporate washed, halved grapes (ensure no seeds) 10 minutes before serving.

  5. Optionally, add 1 teaspoon caraway seeds and 2 ounces diced, cooked bacon to the sauerkraut.
