German Red Cabbage (Rotkohl)
An authentic German Rotkohl dish features tender red cabbage, bacon, and apples, slow-cooked to perfection.

Instructions

In a Dutch oven, brown 2 1/2 oz bacon, then add 1/2 cup diced onion and sauté for 5 minutes.

Stir in 4 cups shredded red cabbage and cook for 2 to 3 minutes.

Deglaze with 1/2 cup red wine and 1/2 cup apple juice. Add 1 tablespoon sugar (or agave/honey), 1 bay leaf, 4 whole cloves, black pepper to taste, and 1 peeled, cored, quartered apple.

Simmer on the stovetop for 2 to 3 hours, stirring occasionally and maintaining a 1/2-inch liquid level with apple juice or water.

Adjust seasonings and serve hot.
