German Falscher Hase (Special Meatloaf)
This German falscher hase, a mock rabbit meatloaf, was developed to resemble roast rabbit during post-WWII meat shortages.

Instructions

Preheat oven to 350 F.

Combine meat, onion, 3 tablespoons breadcrumbs, raw eggs, salt, pepper, paprika, mustard, and parsley in a large bowl.

Spread remaining breadcrumbs on a cutting board; flatten meat mixture into a 1-inch thick rectangle.

Place hard-cooked eggs in the middle of the rectangle. Fold meat over eggs to form a loaf, then coat with more breadcrumbs.

Chop and brown 2 bacon strips in a Dutch oven, setting aside the bacon bits. Brown the meatloaf on all sides in the rendered bacon grease.

Lay remaining bacon strips over the meatloaf. Add 1/2 cup beef broth to the pan. Bake in the oven for 45 minutes, basting with another 1/2 cup broth.

Remove meatloaf, cover with foil, and keep warm.

Return Dutch oven to stovetop, add 1/4 cup hot water, and scrape browned bits from the bottom.

Whisk cornstarch with 1/4 cup cold water, then add to the pan. Bring to a boil, reduce heat, and stir in sour cream without boiling.

Season with pepper and reserved bacon bits. Adjust salt to taste.

Serve meatloaf with boiled parsley potatoes and steamed green beans.
