German Cheese-Noodle Casserole (Käsespätzle)
A traditional German Käsespätzle casserole consists of scratch-made noodles baked with cheese and caramelized onions for a comforting dish.

Instructions

Preheat the oven to 350°F and start boiling a large pot of salted water.

Melt butter and oil in a nonstick pan over low heat, then add sliced onions and cook for 1 hour, stirring occasionally, until lightly browned and sweet; set aside.

Whisk flour and salt; in a separate bowl, beat eggs with water, then add to the flour mixture. Beat dough until smooth, let rest 10 minutes, then beat again, adjusting consistency to a thick batter.

Place half of the spätzle dough into a spätzle maker over the boiling water, pushing dough through so noodles drop. Cook for 2-3 minutes after they rise, then scoop out, rinse briefly, drain, and set aside. Repeat with remaining dough.

Grease a 1 1/2 to 2-quart casserole dish and line with breadcrumbs.

Combine cooked spätzle, cooled caramelized onions, nutmeg, and 3/4 of the grated cheese; mix thoroughly.

Transfer the mixture to the prepared casserole dish and sprinkle with the remaining cheese.

Bake covered at 350°F for 20 minutes, then uncovered for 15 minutes. Optionally, broil for the last 5 minutes to brown the cheese. Serve hot.
