Instructions

  1. Preheat the oven to 350°F.

  2. In a medium bowl, cream confectioners' sugar and butter until fluffy.

  3. Mix in vanilla, almond extract, cinnamon (if using), and salt.

  4. Fold in almond meal and flour using a spatula.

  5. Knead the stiff dough by hand.

  6. On a floured surface, roll out the dough to 1/2-inch thick.

  7. Use a round cutter to make two crescent shapes from each cut, re-rolling scraps as needed.

  8. Line a baking sheet with parchment paper and arrange crescents.
