Georgian Lamb and Rice Soup (Kharcho)

A traditional Georgian Kharcho soup combines tender lamb, rice, and a distinct sour plum fruit roll.

Instructions

  1. Dredge lamb cubes in flour.

  2. In a large pot, melt butter and brown the floured lamb.

  3. Add onion, tomato paste, and garlic; sauté for 2 minutes.

  4. Pour in water or stock with optional salt; bring to a boil. Skim any foam, then reduce heat and simmer partially covered for 90 minutes.

  5. Stir in the plum roll and rinsed rice. Bring back to a boil, then simmer covered for 20 minutes, stirring periodically. Add more liquid if the soup thickens too much.

  6. Serve hot, optionally garnished with chopped dill.
