Georgian Cheese Bread Recipe - Acharuli Khachapuri

Instructions

Preheat oven to 400°F (200°C).

Combine warm water and yeast in a small bowl; set aside.

In a large bowl, mix flour, milk, oil, one egg, sugar, salt, and the yeast mixture. Knead until a smooth, elastic dough forms, adding more warm water if needed.

Cover the bowl with greased plastic wrap and let the dough rise in a warm place for 2 hours.

Punch down the dough, divide into three pieces, cover with greased plastic wrap, and let rest for 15 minutes.

In a medium bowl, combine grated cheese, one whole egg, and butter, if using.

Separate another egg, reserving the yolk for brushing the dough and discarding the white.

Roll each dough ball and form into a boat shape.

Place equal portions of cheese filling in the center of each dough boat; fold the dough sides and ends to create a boat.

Arrange khachapuri on a parchment-lined baking sheet and bake for 12 minutes.

Remove from oven, brush the dough with the reserved egg yolk, and crack one additional egg into the center of the cheese filling on one khachapuri.

Return to the oven for 3 minutes, or until the egg white is set but the yolk remains wobbly. Serve immediately with butter.
