Heat oil to 375 F.

Beat an egg in one bowl; in another, mix flour, cornstarch, and salt.

Coat chicken pieces in egg, then in the flour mixture, and fry in the hot oil until golden brown and cooked through; drain on paper towels.

For the sauce, whisk together chicken stock, sugar, rice wine vinegar, hoisin, sesame oil, Sriracha, dark soy sauce, and cornstarch in a bowl.

In a pan, cook scallion, ginger, and garlic in oil for 1-2 minutes until fragrant, then add the whisked sauce mixture and bring to a boil; cook until thickened.

Toss the fried chicken with the thickened sauce and sprinkle with toasted sesame seeds.
