Garlic-Mustard Filet Mignon

Instructions

Heat a heavy skillet over high heat until very hot, then add 1 tablespoon butter and swirl.

Rub filet mignon steaks with Worcestershire sauce, salt, and pepper.

Brown steaks in the hot skillet 3 to 5 minutes per side for medium-rare, then remove and tent with foil.

In the same skillet, stir shallots and garlic for 30 seconds.

Pour in wine, stir, and scrape browned bits for about 2 minutes.

Add broth, bring to a slow boil, and cook for 3 minutes.

Stir in heavy cream and cook until the sauce thickens, 3 to 5 minutes.

Whisk in Dijon mustard until smooth.

Return steaks to the pan and warm for 1 minute before serving, garnished with chives.
