Garlic-Mustard Filet Mignon

Instructions

  1. Heat a heavy skillet over high heat until very hot, then add 1 tablespoon butter and swirl.

  2. Rub filet mignon steaks with Worcestershire sauce, salt, and pepper.

  3. Brown steaks in the hot skillet 3 to 5 minutes per side for medium-rare, then remove and tent with foil.

  4. In the same skillet, stir shallots and garlic for 30 seconds.

  5. Pour in wine, stir, and scrape browned bits for about 2 minutes.

  6. Add broth, bring to a slow boil, and cook for 3 minutes.

  7. Stir in heavy cream and cook until the sauce thickens, 3 to 5 minutes.

  8. Whisk in Dijon mustard until smooth.

  9. Return steaks to the pan and warm for 1 minute before serving, garnished with chives.
