Garlic-Lemon Rotisserie Chicken

Instructions

  1. Preheat grill for high heat, arranging for rotisserie cooking.

  2. Remove any fat from the chicken cavity.

  3. Rub the chicken with half of the garlic and then with half of the lemon.

  4. Combine the rub ingredients and apply a portion to the chicken's exterior.

  5. Place the remaining lemon and garlic halves inside the chicken.

  6. Truss the chicken, then brush its outside with oil.

  7. Apply the rest of the rub mixture to the chicken's exterior.

  8. Secure the chicken onto the spit.

  9. Cook for 75 to 90 minutes, until the skin is golden-brown and an internal temperature of 165-170F (75C) is reached in the thickest part of the thigh.

  10. Transfer the cooked chicken to a platter, cover loosely with foil, and let it rest for 5 to 7 minutes before carving.
