Garlic and Rosemary Mediterranean Pork Roast

Instructions

  1. Preheat oven to 250 F.

  2. Cut 10 to 12 deep, random slits into the pork roast.

  3. Stuff each slit with a garlic sliver and a rosemary leaf.

  4. Season the roast generously with salt and pepper.

  5. Heat olive oil in a skillet over medium-high heat, then brown the roast well on all sides.

  6. Transfer the browned roast to a rack in a roasting pan and cook in the preheated oven for 60 to 70 minutes, or until an internal temperature of 145 F is reached.

  7. Flip the roast after 30 minutes of cooking.

  8. Rest the roast on a cutting board, tented with foil, for 15 minutes.

  9. Slice and serve.
