Garlic and Herb-Crusted Pork Loin Roast

Preheat the oven to 450 F.

Line a large roasting pan with foil and a rack; place the roast on it and season with salt and pepper.

Combine herbs, garlic, and olive oil in a bowl, then rub this mixture over the pork roast.

Cover the roast with foil and refrigerate for 2 to 4 hours.

Roast, covered, at 450 F for 30 minutes, then reduce heat to 425 F and continue roasting for approximately 20 minutes per pound, or until internal temperature reaches 145 F.

Tent the finished roast with foil and let it rest for 10 minutes before slicing and serving.
