Heat a heavy skillet over medium heat and roast coriander seeds, cumin seeds, black peppercorns, black cumin, cloves, cinnamon, and crushed bay leaves, stirring occasionally, until aromatic and slightly darker.

Cool the roasted spices completely on a plate, then remove badi elaichi seeds from their skins and combine with all roasted spices and dry ginger.

Grind all combined spices into a fine powder using a clean, dry coffee grinder.

Store in an airtight container in a cool, dark place.
