Instructions

  1. Drain tofu by wrapping in paper towels, pressing with a cutting board for 15 minutes, then squeezing in a cotton cloth.

  2. Mash the drained tofu until smooth in a large bowl.

  3. Combine mashed tofu with carrot, shiitake, yamaimo, egg, sesame seeds, flour, and salt; mix thoroughly.

  4. Heat deep-frying oil to 340-350 F.

  5. Form the tofu mixture into small ovals and deep-fry until golden brown.

  6. Drain the fried tofu and serve with soy sauce and grated ginger.
