Galbitang: Korean Short Rib Soup

Instructions

Soak the ribs in cold water for 1 to 2 hours, changing the water several times; for a traditional method, soak for 8 to 10 hours.

Combine sliced radish with soy sauce, sesame oil, garlic, ginger, and pepper to create the seasoned radish.

Place the soaked ribs in a pot, cover with fresh water, bring to a boil, and then simmer vigorously for 5 minutes.

Remove the ribs, rinse off any impurities under cold water, then transfer them to a large pot and cover with 4 cups of fresh water.

Bring the water to a boil, then reduce heat and simmer the ribs over high heat for 30 minutes.

Incorporate the seasoned radish and 2 teaspoons of salt into the pot and cook for an additional 10 minutes.

Add the noodles and continue cooking for 4 minutes.

Stir in the sliced scallions and cook for one more minute.

Serve the Galbitang hot, with an optional sprinkle of chili powder.
