Instructions

  1. Preheat the grill to 500F or prepare a hot charcoal fire.

  2. Blend pear, scallions, garlic, soy sauce, sugar, fish sauce, mirin (if desired), sesame oil, and black pepper until smooth; pour into a large resealable bag.

  3. Tenderize the beef around the bones by pounding until it appears doubled in size.

  4. Add the tenderized beef to the marinade bag, massage to coat, seal, and refrigerate for 6 to 20 hours.

  5. Before cooking, remove the meat from the fridge 30 minutes prior, allowing excess marinade to drip off.

  6. Grill the meat over direct heat for 15-18 minutes, flipping frequently, until well-browned and lightly charred.

  7. Serve with rice, lettuce, kimchi, and other side dishes.
