Funnel Cake Fries

A convenient, less messy version of classic state fair funnel cake, shaped as fries.

Instructions

  1. Heat two inches of oil in a pot to 375 F.

  2. Beat eggs and sugar until foamy, then whisk in milk and vanilla.

  3. Sift flour, baking powder, and salt, then gradually whisk into the wet mixture until no lumps remain.

  4. Transfer batter to a squeeze bottle or piping bag with an opening suitable for creating fries.

  5. Pipe batter into the hot oil in straight lines, frying approximately 5 at a time without overcrowding.

  6. Cook for about 1 minute per side until golden brown, then remove to a paper towel-lined plate.

  7. Maintain oil temperature at 375 F for subsequent batches; keep finished fries warm in a 200 F oven if desired.

  8. Dust with confectioners' sugar and serve with dipping sauce.
