Funnel Cake Bites

Instructions

Heat 2 to 3 inches of oil in a heavy-bottomed pot to 375 F.

Beat eggs and sugar in a large bowl until foamy, then whisk in milk and vanilla extract.

Sift flour, baking powder, and salt into a separate medium bowl.

Gradually add the sifted dry ingredients into the wet mixture until just combined and lump-free, avoiding overmixing.

Using a cookie scoop, add portions of batter (approximately 1/3 scoop full) into the hot oil.

Fry for 2 to 3 minutes, flipping halfway, until golden brown on both sides.

Remove the fried bites with a slotted spoon to a paper-towel-lined plate.

Dust with powdered sugar and serve immediately.
