Instructions

  1. Preheat oven to 350 F and line a cookie sheet with parchment paper.

  2. Cream butter and sugar until combined, then beat in eggs one at a time, followed by vanilla and almond extracts.

  3. In a separate bowl, whisk together flour, baking powder, and salt; gradually add to the butter mixture until fully combined.

  4. Stir in sprinkles.

  5. Divide dough in half, form into 10-12" long by 2-3" wide logs on the prepared sheet, dusting with flour if sticky.

  6. Bake for 30 minutes until golden brown, then cool completely.

  7. Discard parchment paper, slice loaves diagonally into 1 1/2" thick pieces, and place cut-side down on an unlined cookie sheet.

  8. Return to the 350 F oven for 10 minutes, flip, and bake for another 10 minutes.

  9. Cool completely.

  10. If desired, prepare candy melts as directed and drizzle over cooled biscotti; allow to harden before serving. Store in an airtight container at room temperature.
