These Funfetti cookies combine soft, chewy texture with delightful birthday cake flavors, perfect as a standalone treat or in ice cream sandwiches.

Instructions

Preheat oven to 350°F and line baking sheets with parchment paper.

In a small bowl, combine flour, baking soda, salt, and cream of tartar.

Beat butter in a deep bowl until creamy for 30 seconds.

Add sugars; beat until light and creamy (3-5 minutes). Incorporate egg and vanilla, then beat until fluffy (1 minute).

Gradually add the flour mixture; mix until just incorporated and no flour is visible, then stir in sprinkles.

Drop 1 1/2 tablespoon portions of dough onto prepared sheets, spacing 2 inches apart.

Bake one sheet at a time for 12 to 14 minutes, until edges are lightly browned and tops are set but centers remain soft.

Cool cookies on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
