Ful Medames (Egyptian Fava Beans)

Instructions

  1. Soak fava beans overnight in water.

  2. Drain soaked beans; transfer to a saucepan, cover with fresh water, bring to a boil, then simmer for 45-60 minutes until tender.

  3. Drain cooked beans; in a bowl, combine with crushed garlic, lemon juice, olive oil, and cumin, mixing thoroughly; optionally mash beans.

  4. Serve hot, topped with diced tomato, parsley, an oil drizzle, and pita bread.
