Frozen S'mores

Instructions

  1. Preheat the oven to broil.

  2. Line a 9x13-inch baking dish with parchment paper.

  3. Spread softened chocolate ice cream evenly into the lined dish and freeze for 1 hour until mostly set.

  4. Place marshmallows on greased parchment paper and broil on the center rack for 1 to 2 minutes until soft and gooey.

  5. Combine toasted marshmallows, room temperature whipped topping, cream cheese, marshmallow fluff, and vanilla extract in a bowl, then beat with a hand mixer until mostly smooth.

  6. Spread the marshmallow mixture evenly over the chocolate ice cream layer and freeze for another hour until both layers are completely set.

  7. Arrange graham crackers on the frozen layers to determine cutting guides, then cut the layers to fit the crackers.

  8. Place one graham cracker on the top and bottom of each square.

  9. Serve immediately or wrap individually and freeze for later.
