Instructions

Heat 2-inches of oil in a large pot to 350 F.

Whisk together flour, cornstarch, baking powder, and 1 teaspoon salt in a bowl; slowly whisk in club soda until slightly lumpy.

Dip a quarter of the vegetables, seafood, lemon, and herbs into the batter.

Fry for about 2 minutes, turning until lightly golden, then transfer to a paper towel-lined wire rack and sprinkle with salt.

Repeat with remaining ingredients and serve hot.
