Fried Zucchini Blossoms

Instructions

  1. Start heating about 1/2 inch of oil in a wide, deep pan to 375 F.

  2. Optionally, stuff each zucchini blossom with approximately 1 teaspoon of cheese, gently tucking it between the petals.

  3. In a small bowl, beat an egg, then whisk in flour and salt, followed by enough club soda to create a very thin batter.

  4. Dip each zucchini blossom into the batter, allowing any excess to drip off before carefully placing it into the hot oil.

  5. Cook blossoms, undisturbed, until golden on one side (about 3 minutes), then flip and cook until golden on the other side (about 2 minutes), frying in batches as needed.

  6. Remove cooked blossoms with a slotted spoon, drain on paper towels, sprinkle with salt, and serve immediately.
