Fried Squash and Zucchini Blossoms (Fiori di Zucca Fritti)

Instructions

Remove the stem, internal parts, and sepals from each zucchini blossom.

Separate eggs; beat yolks.

Stir sparkling water into the yolks, then whisk in flour, salt, and nutmeg.

Beat egg whites to soft peaks, then gently fold them into the batter. Adjust thickness with more sparkling water or flour if needed.

Heat frying oil in a heavy-bottomed pot or skillet.

Dip each prepared blossom into the batter, allowing excess to drip, and fry in batches, turning gently, until light golden brown.

Drain on paper towels, sprinkle with salt, and serve immediately.
