Fried Shrimp Po' Boy Sandwiches

Instructions

  1. Heat oil to 375F in a deep fryer or heavy saucepan and line a baking sheet with paper towels.

  2. Peel and devein the shrimp, then rinse and pat them dry.

  3. Whisk milk, hot sauce, and egg in a bowl, then add shrimp and let them soak for 3 to 4 minutes.

  4. In a separate bowl, combine flour, cornmeal, baking powder, Cajun or Creole seasoning, salt, and pepper.

  5. Remove shrimp from the wet mixture, coat them thoroughly in the dry mixture, then fry in batches for 2 to 3 minutes until golden brown.

  6. Transfer fried shrimp to the paper towel-lined pan.

  7. Slice and split baguettes, then spread with mayonnaise, arrange fried shrimp, and top with tomato and lettuce.

  8. Serve with dill pickle chips.
